The process begins

5 days curing in the fridge, just enough time for Superbowl Sunday. On Sunday, off to the smoker for 6 hours and then finishing in the steamer. Will be serving this sliced thin on rye with good mustard. I’ll let you know how it turns out.

Stay tuned for pictures on Sunday and potentially a good addition to a Tuesday night.
